Breakfast Pancake

I'm happy to know that my cooking tips are really helpful for many of my friends especially girls who are newly married and boys who are abroad on their work project. The next choice they have if they don't get their moms in phone is to browse my blog. They insist me to provide easy recipes and i see that easy breakfast items are more in demand. So here goes another easy breakfast, its nothing but fluffy pancakes.

Maida / all purpose flour : 1 cup
Egg : 1
Milk : 1 cup
Sugar : 4 teaspoons
Salt : a pinch
Vanila essence: 3-4 drops

Mix sugar and milk. Whisk an egg in a bowl and mix with milk [make sure the milk is not hot, obviously egg gets cooked when it is hot ;)] Add salt and vanila essence into the mixture. Beat well and add flour little by little into the mixture. stir well to make it a smooth batter. If it is thick pour little more milk. The batter is ready. Now pour little [say one ladle] on a hot greased pan and cook until both sides are brown. [like how u do dosas, this should be smaller and thicker in size]

Tips: a pinch of baking powder in the flour can do wonders. sugar can be powdered sugar. blend in melted butter in the batter for a good smell and taste.

Serving suggestions:
-- squeeze honey all over your pancakes
-- roll it with your favourite jam inside
-- decorate with fresh cream, cinnamon powder, cut fruits, chocolate chips, custard and the like.

Happy Appetite !
